HACO takes its name from the Japanese word meaning “theatre,” and every dish becomes a stage in this immersive and refined dining experience. Tucked away at the end of a laneway off Alberta Street, this intimate 12-seat omakase restaurant brings the artistry of Tokyo’s opulent Nishi-Azabu neighborhood to Sydney’s CBD.
Led by Executive Chef Kensuke Yada, who brings over a decade of experience in Sydney’s fine dining scene along with training rooted in Japan’s most respected washoku traditions, HACO presents a truly one-of-a-kind omakase experience. By fusing charcoal grilling with the delicacy of tempura, Chef Yada creates a dining style that cannot be found elsewhere in Sydney.
The restaurant resembles the kind of high-end omakase diners you’d encounter in Tokyo. An American walnut counter dominates the intimate space, with 12 settings illuminated by hanging spotlights that cast dramatic light on each bite-sized course. Dishes are presented on bespoke limestone plates hewn from a single stone from the Hunter Valley, adding to the theatrical presentation.
