Nestled in the vibrant heart of Surry Hills at 413-415 Crown Street, Itō is a stunning two-storey izakaya that reimagines traditional Japanese dining through an Italian lens. Part of the acclaimed ESCA Group portfolio (alongside AALIA, Nour, and Lilymu), Itō opened in late 2023 in the former Cuckoo Callay space, transforming it into an 85-seat dining destination with an additional 25 alfresco seats.
Head Chef Erik Ortolani brings exceptional credentials to Itō, with five years as Head Chef at Nobu Milan and experience at Cho Cho San in Sydney. His Italian heritage combined with his passion for Japanese cooking creates a unique culinary vision: fresh seasonal produce, smart cooking techniques, and bold flavors that bridge two celebrated cuisines.
The restaurant’s interior, designed by celebrated Australian architect Matt Darwon, features warm Tasmanian blackwood furniture, clean lines, and pops of color inspired by sushi ingredients—ruby tuna, orange salmon, and blue steel. A gorgeous kimono adorns one wall, while the acoustics ensure intimate conversation even during busy service.
