Behind this extraordinary concept is Joel Best, whose seafood expertise at Bondi’s Best earned him acclaim before his many trips to Japan inspired a deeper passion. His connections with Japan’s “whisky mafia” have enabled him to curate a collection of limited-edition bottles—some with only a few hundred produced worldwide—making Bar Besuto a destination unto itself.

At the helm of the omakase is Chef Michiaki Miyazaki, trained by the legendary 3-Star Michelin restaurant Kikunoi Honten in Kyoto, Japan. Chef Michi is a master of traditional omakase techniques, and his 20-year partnership with Joel creates a chemistry that transforms dinner into an unforgettable performance.
